We have seven blocks of Sauvignon Blanc planted on diverse soils and slopes (mostly south facing, with a combination of Bokkeveld shale and Table Mountain sandstone soils). These blocks are harvested and vinified separately, allowing us to document the impact of the different sites on the wine. So far, the shale blocks seem to produce a wine that is rich and textured, while the sandstone blocks have more granadilla, sweet melon and green tropical flavour profiles.We are still getting to know our vineyards (a lifelong task), and deciding where to place our focus going forward, but our style of Sauvignon Blanc will always be delicate and balanced, with no specific element overpowering the others. Our Sauvignon Blancs appeal lies in its minerality, clean palate and viscosity.In the cellar, reductive winemaking techniques are employed. These preserve the aroma and flavour of the grapes, resulting in a fruity and fresh-tasting wine. On average, the juice will have about 12 hours skin contact and undergoes a cool fermentation with natural yeasts. The wine is left on the lees for about six months after which the final tank selections are made, usually with a small percentage of wooded Semillon added for extra complexity.Alcohol: 13.17 % vol Sugar: 1.8 g/l pH: 3.11 TA: 7.1 g/l
