This complex white wine is light golden in color, with lemon blossom, mandarin, and pink lady apple aromas. The palate features fuji apple and pear flavors, with a supple texture and lively acidity. The Copain Tous Ensemble Chardonnay's grapes see foot tread in macro bins before going direct to press in whole clusters. The juice is then pressed to tank, settled overnight, and barreled down. The wine then undergoes natural fermentation, both primary and malolactic, in the barrel, with no stirring. After aging on lees for 8 months, the wine spends an additional 2 months in stainless steel tanks. The growing season started with winter and spring rains that were near normal, compared to the drought conditions of prior years. The warm and dry summer contributed to an early start to harvest. The yields coming out of this vintage were, for the most part, normal compared to the massive decrease we saw in the previous vintage.
